Wish I had taken a picture, it was completely plant based and low fat. I was kind of stressed out this evening and I want to stick to this whole plant food way of eating, but of course when I get stressed the idea of ordering a pizza starts ringing in my brain.
Instead I decided I'd rather make something now than wait, and besides, I said, if you're still hungry after this then maybe. But of course I wasn't hungry after those two overstuffed pitas, it was so satisfying. Proud of myself that I didn't give in to some greasy fast food just because my anxiety was high.
This is what I put in a saute pan, without oil, then stuffed inside two pita pockets toasted in the toaster-
black beans
chopped onion
sliced green pepper
sliced baby bella mushrooms
some leftover plain brown rice from yesterday
thin sliced squash
handful of baby kale
chopped up piece of vegan Sweet Earth "bacon"
Mrs Dash Southwest seasoning, garlic salt, pepper, paprika, tumeric, nutmeg
I had earlier tried to make this vegan cheese dip made of boiled squash, onions, nooch, white beans and spices that came out more like a soup, so I put a few spoons of that in the pan too. Very flavorful
Stuffed it all piping hot into two toasted pita pockets -- :D
Mostly really proud that I did this instead going the fast food route, also it was so so satisfying. I'm glad I avoided a greasy temptation and then felt so good after this meal
