2-3k Calorie deficit per day sustainable if I exercise hard daily?

I started at 270 lbs a couple months ago. Around a month ago I started going to the gym and doing fairly extreme cardio sessions + strength sessions. Now I weigh 230.

My normal meals for the day are:

1 Protein bar at ~9 am

Some form of chicken for lunch (usually ~600 calories)

1 Protein bar at 1-2 pm

Smoothie with strawberries & blueberries mixed with 1 cup of protein powder with almond milk as the base at ~6 pm

So on average, my calorie intake is around 1500. I've been aiming to burn ~4-5k calories 6 days a week with one rest day. I feel stronger than ever, faster than ever, better than ever. I keep reading about a magic "1-2 pounds a week is all you should lose or you'll burn muscle"... but what if I'm building muscle faster than it's burning? I've nearly doubled my strength in the last month. I went from being able to barely do 10 reps of a 20 pound dumbell, to doing 15 reps of a 50 pound dumbell 5-10 times a day, along with other noticable increases in my triceps, lower back, legs and abs.

I have a hard time believing that anything bad is happening to my body, it all feels great.

Has anyone else been through similar? Lost a bunch of weight quickly but exercised the whole way through and burned it while gaining muscle?
