How to make sure your metabolism doesn't drop so low that you stop losing weight? (without increasing food intake)

I'm male 208 lbs 5'6'' 24yo and trying to get to 140 lbs (or until my pot belly and folds disappear) over the next months. I workout on and off, haven't really committed to an exercise plan which is why I'm kind of nervous about choosing my activity level to calculate my calories (sedentary vs moderate exercise weekly). But at the bare minimum, I eat at least 1500 and at most 2000 calories a day to put me at-- according to the calorie calculator-- a deficit in order to lose about one to two pounds a week. On exercise days I eat more. I usually only eat one or two meals a day, unintentionally intermittent fasting I guess.

I've been hearing about if you drop your calorie level too low, then eventually your metabolism will become so slow that you'll stop losing weight. Is there a way to prevent this without upping the calories? I'm afraid this might happen to me, because I've never eaten this small portions before.
