How to deal with wildly different TDEE?

My struggle is simple: I teach barre classes and take them regularly. This means I have days that I burn around 3,000 calories (per my apple watch) and on non-active days I may only burn 1,700. I am having a hard time adjusting my daily intake to compensate, as I don't exactly know at the start of the day what my calories out will look like. (I have a ton of last minute occasions where I have to cover a class/or it gets cancelled, etc).

I tried going with my lowest TDEE and subtracting 500 calories from that, but I wound up having some sort of anemic episode where I was in bed for two days with ZERO energy. Has anyone else had this issue? Thoughts or advice is much appreciated!
