Calorie intake / activity level confusion

I need some advice on my calorie intake. It's been going well for months but for some reason it's not enough anymore. I've been able to sustain myself at 1200 kcal to 1300 kcal max, an amount set by the MFP app but lately it's impossible.

I've started this year in January at 78 kg, and managed to reach 62.5 kg this week. I'm a female, 32 years old and 1.61m short. In the summer I got most of my exercise from walking the dog 3 times a week (7-10 km a day). Later in the summer I started working out at a gym with a Milon circle, and since this week I got switched over to eGym (which is way more fun and better for my body). I'm aiming for 60 kg as the milestone, then hoping to bring it further down to 56 kg, but the last bit is going so painfully slow and hungry.

I have a torn outer meniscus, patella arthrosis and a chronic bursitis ans pesarinus in my right knee (aka my knee is fucked). On top of that my back and neck are not entirely okay, and I'm diagnosed with fibromyalgia. I'm currently working with a doctor and physical therapist. On off days I do yoga at home to make sure my back doesn't get too stiff, as it tends to do awfully quick. Outside of actually working out/working on myself, I also have a house, pets, boyfriend and young stepdaughter to take care of. I don't work, but the house and my family take up all my energy as is.

I feel like I'm a busy pretty woman, but according to the internet most tasks I perform outside of working out do not count towards activity level while I'm left exhausted at the end of the day, and hungry. My physical therapist even asked if I sit a lot. I only sit a lot at night, but then I'm so tired from the whole day it's hell of a job to get up again to do the final, short dog walk. The hunger makes me scavenge for food during the evening.

I have this feeling I'm not eating enough, but I find it hard to figure out the activity level because my body operates differently than a healthy person.

Does anyone have a suggestion for me?
