Paralysis by Analysis? Help!

Hi everyone - looking for advice - you name the diet.. I’ve done it. Weightwatchers, paleo, keto, completed a whole 30, intermittent fasting, and the list goes onnnn. I just turned 30, 5’8 1/2 and I’ve crept up to 185-190 pounds, but I’m comfortable around 170, I look super thin around 165. I’m tall with an athletic build. What I feel like I need help with is finding something and sticking to it. I’m at the point I feel as though I’m going through ‘paralysis by analysis’- meaning there is SO MUCH crap and ideas and diets and ‘new ways to eat healthy’ that I’m losing my mind. I’ll eat a certain way, have a slip up, binge, want to try something new. I’ve tried so many things I feel like my metabolism is so screwed up, I can easily be 7-8 pounds heavier in a day. I know it’s not fat gained but still. So now I try to not weigh myself. I’ve dabbled in intuitive eating which I like bc it’s all ‘diets don’t work, eat anything you want listening to your body, etc,’ I just couldn’t accept me gaining weight. My head didn’t feel clear, breaking out, unhappy etc. I know the way to eat healthy and what I have to do, I’m a health & physical education teacher with a masters in exercise science for a little background... it’s just my type A personality is so all or nothing that I am not finding success. Any help, advice, words of wisdom - anything would be greatly appreciated! Thank you for taking the time to read this.
